Gluten Free Zucchini Flowers (Stuffed with Gorgonzola and Parmesan)

One of my all time favourites! I missed these so much when I discovered I was gluten free. I had to work out a way of creating this dish without the gluten free crumbs falling off and being gluggy!

Gluten Free Zucchini Flower are one of my all time favourites! I missed these so much when I discovered I was gluten free. I had to work out a way of creating this dish without the gluten free crumbs falling off and being gluggy!

This is a gorgeous entree for a dinner party, a nibble with a glass of champagne or to serve along side an Italian buffet for your family. You could also make these mid week and serve with a salad.

Ingredients

  • ZUCCHINI FLOWERS: Your fruit and veg shop will have these available near the zucchinis. Usually in a packet. They will look flat and impossible to fill, but I promise you, this will all come together.
  • GORGONZOLA: The creamy blue cheese. One small block will fill about 6-8 zucchini flowers
  • PARMESAN: Freshly grated is best! 4 tablespoons.
  • GLUTEN FREE CRUMB: uYou can buy gluten free crumbs from your supermarket or you can make your own by blitzing gluten free breadcrumbs in your food processor
  • FREE RANGE EGG: Just one to beat and place in a bowl
  • TO SERVE: Fresh Green Salad!

Instructions

  1. Let’s get cooking! We are going to use an airfryer for this recipe! Its easy, quick, no mess and no need to excessive oil
  2. In bowl, add your gorgonzola, parmesean and sprinkle salt/pepper
  3. Gently stuff each flower. Dont panic if you accidently tear part of the flower as it will stick together with the crumb.
  4. Create a system. A bowl of beaten egg. A plate with the crumbs.
  5. Dip the zucchini flower into the egg. Then swirl around in the breadcrumbs until completely coated. Place in the airfryer. Set the timer for 12 mins on 180c. Once crispy and cooked, remove gently on top a plate to enjoy! Be careful to not eat them too quickly as the cheesey middle will be HOT!

Tips and Tricks

Can I use other cheeses?

If you are not a fan of gorgonzola, you can change to mozzerella

Can I prepare these in advance?

You can prepare the zucchini flowers in advance and then place in the fridge. Best to crumb them just before cooking

Can I freeze this dish?

No!

US Readers – If you can not find Zucchini Flowers, you could stuff Peppers or Corguettes. Delicious!
