Serves 4
- 1 cup PEANUT BUTTER: , I prefer crunchy
- 1 cup DESSICATED COCONUT
- 1 EGG: , free range is always the best option
- 1/2 cup ROASTED PEANUTS: A delicious texture
Place all the ingredients in a bowl. Mix with electric beaters until smooth
Preheat oven 180c and line baking trays with baking paper
Roll mixture into balls and place on the tray. Gently press with a fork.
Bake for 10 minutes until brown
Be warned - let the cookie cool before you eat one! From past experience, they are hot!
