4 Ingredient GF Peanut Cookie

Serves 4

Ingredients
 

  • 1 cup PEANUT BUTTER: , I prefer crunchy
  • 1 cup DESSICATED COCONUT
  • 1 EGG: , free range is always the best option
  • 1/2 cup ROASTED PEANUTS: A delicious texture

Instructions
 

  • Place all the ingredients in a bowl. Mix with electric beaters until smooth
  • Preheat oven 180c and line baking trays with baking paper
  • Roll mixture into balls and place on the tray. Gently press with a fork.
  • Bake for 10 minutes until brown
  • Be warned - let the cookie cool before you eat one! From past experience, they are hot!
