Baked Herb Fish with Rustic Italian Salsa

A few ingredients makes this gluten free meal a healthy option with no fuss

Serves 4

Ingredients
 

  • 4 200g White Firm Fish
  • 3 tbsp Dried Oregano
  • 2 Fresh Tomatoes: , Diced
  • 1 bunch Fresh Basil:, Chopped
  • 1 cup Olives:, Diced
  • 2 whole Lemons

Instructions
 

  • Preheat oven 180c.
  • Place the fish in a single layer on an oven tray or dish. Drizzle with olive oil, season with salt and pepper, sprinkle with oregano. Squeeze half a lemon and bake for 25 minutes or until completely cooked through
  • Dice the tomato and olives. Place in a bowl. Add chopped basil and season well with salt and pepper. Add a dash of olive oil and white vinegar.
  • Place the cooked fish on a large white platter. Arrange the salsa on top of the fish. Drizzle a little more olive oil and serve with lemon wedges.
