Crispy Beef Croquettes (Gluten-Free)

Everyone loves a crispy mouthful of deliciousness! My Crispy Beef Croquettes are so simple to make and are a great way of using up leftover mashed potatoes!

Serves 4

Ingredients
 

  • 500g potatoes
  • 500g beef mince
  • 1 cup grated cheese, I opted for grated mozzerella
  • 1/2 cup shallots, Finely sliced
  • 2 cloves garlic, Finely sliced
  • 2 free-range eggs, Always love to bright colour of the yolk
  • 2 cups gluten-free bread crumbs, Store bought or make your own

Instructions
 

  • Heat a large pot of water and bring it to a boil. Add the potatoes and cook until soft. Mash them, season with salt, and let them cool.
  • In a big bowl, mix the beef mince, garlic, shallots, and cheese. Add the mashed potatoes and mix well. Season with salt and pepper. You can also add extras like grated veggies, different cheeses, or baby spinach – or keep it simple!
  • Beat the eggs in one bowl and put the crumbs in another. Shape the mixture into small croquettes, like mini sausages or koftas. Roll each one in the egg, then in the crumbs.
  • Place them on a baking tray lined with baking paper. Spray with olive oil and sprinkle with a little salt.
  • Bake in a preheated oven at 180°C for 15 minutes. Then, flip them over and bake for another 10 minutes until golden and crispy.
  • Serve with tomato sauce or a sweet chilli and sour cream dip – yum!
