Easy Vegan Patties (Gluten, Dairy, Egg Free)

You will be surprised how effortlessly these patties come together with minimal ingredients

Serves 6

Ingredients
 

  • 2 400g Chickpeas: , Drained. Just save 1/4 cup of liquid to add to the mixture
  • 2 cups GF Flour
  • 1 400g Corn Kernels
  • 1 cup Baby Spinach
  • 2 tbsp Smoked Paprika
  • 1 cup Zucchini:, Grated

Instructions
 

  • Preheat the oven 200c.
  • Add all ingredients into a bowl and mix to combine. If you need a little more flour, just add a couple of spoonfuls. The patty mixture will hold together.
  • Create a burger patty size and place on a lined baking tray. Spray with olive oil. Season with salt and pepper. Pop in the oven for 15 minutes until brown (you could alternatively cook the patties in the airfryer.
  • Once cooked, take out of the oven to cool. They will harden as they cool. Serve with burgers and salad or just on their own.
