Gluten Free French Coq au Vin

Gluten Free French recipes are super easy to convert to a gluten free recipe. I love the flavours which are always simple yet magically come together to create a fancy ,meal! Coq Av Vin is a classic French meal and I encourage you to cook this recipe without fear of it being an intiminidating session in the kitchen.

Serves 4

Ingredients
 

  • 1kg mixed CHICKEN THIGH AND DRUMSTICKS
  • 1 WHITE ONION, Sliced
  • 4 cloves GARLIC, Sliced
  • 250g BACON, Diced
  • 1 cup MUSHROOMS, Cut in half
  • 1 cup RED WINE
  • 2 tbsp TOMATO PASTE
  • 1 cup GLUTEN FREE FLOUR
  • 1 sprig FRESH ROSEMARY

Instructions
 

  • Let's get cooking! In a snap lock bag or plastic bag, place the chicken and gluten free flour. Shake it and ensure all of the chicken is coated with the flour
  • Heat a large frypan with 2 tbsp olive oil. Start the panfry the chicken pieces until brown all over. No need to cooked through. Approx 5 minutes per side. Then set aside.
  • In the same frypan, add all your other ingredients and start the smell the delicious sauce come together. Bring to boil, then simmer for 10 minutes.
  • Then add the chicken back into the frypan and evenly coat. Place a lid on the frypan for 15 minutes to ensure the chicken is cooked through. At the end, add fresh parsley and season with salt/pepper.
  • To serve - Creamy mash potato and lots of greens
