Gluten Free Zucchini Fetta Parmesean Burgers (in the airfryer!)

Gluten Free Zucchini Fetta Parmesean Burgers cook beautifully in the airfryer! Love it!!! In our family, we have never used a microwave for many heath reasons. So when the airfryer was invented, it changed our life. I love making these burger patties for the family as a vego option. You can hide more veggies if you are keen!

Serves 4

Ingredients
 

  • 2 medium Zucchini, grated
  • 1/4 cup Fetta
  • 1 Red Onion, diced
  • 1/4 cup Parmesean
  • 2 Free range eggs
  • 1 cup Sweet Potato, grated
  • 1/2 ci[ Gluten Free Self Raising Flour
  • TO SERVE: Gluten Free Buns, Sliced Beetroot, Sliced Tomatoes, Caramelised Onions, Baby Spinach, Chilli Sauce

Instructions
 

  • Let's get cooking! In bowl, add the eggs, the grated zucchini. sweet potato, the onion, fetta, flour and parmesean. Mix this together.
  • Create patties about the size of your hand and push together to ensure its all nice and tight. See photo. PLace in the airfryer with lined with baking paper.
  • Cook 180c for 10 mins. Then gently flip them over to the other side an cook for another 10mins. Season with salt and pepper
  • Then build your burger. Lots of colour and delicious flavours or whatever you have in the fridge. Choose good quality gluten free buns, its worth it! Toast them for the crunch on the outside and softness inside
