Italian Easy Slow Cooked Shanks

This recipe is so easy to set and forget. Leaving the household salivating as the shanks cook slowly through the day

Serves 4
- 2kg Lamb Shanks
- 1 Onion, Finely Chopped
- 3 cloves Garlic: , Diced
- 2 450g Crushed Tomatoes
- 4 tbsp Tomato Paste
- 2 tbsp Oregano
- 1 cup Stock
Preheat oven to 160c.
Sear lamb shanks: Heat olive oil in a large oven-safe pot. Brown lamb shanks on all sides (about 5–6 minutes). Remove and set aside.
Sauté aromatics: In the same pot, add chopped onion and garlic. Cook until softened (about 3 minutes).
Add tomatoes & herbs: Stir in crushed tomatoes, tomato paste, oregano, salt, and pepper. Add 1 cup of water or stock and stir to combine.
Return lamb: Nestle lamb shanks back into the sauce. Cover with lid or foil.
Slow cook in oven for 3–3.5 hours, until meat is tender and falling off the bone.
