Meatless Monday Lentil Parmesean Patties

Delicious option for a Meatfree Monday or anytime of the week!

Serves 6

Ingredients
 

  • 1 400g LENTILS
  • 1 cup SWEET POTATO , Grated
  • 1 cup BROCCOLI, Cut finely
  • 1 cup BROWN OR WHITE RICE, Precooked
  • 1 cup GLUTEN FREE FLOUR
  • 1/2 cup PARMESEAN, Freshly grated

Instructions
 

  • Let's get cooking! Literally throw all ingredients except the parmesean into a bowl. Mix and make the patties. Approx 6.
  • Preheat oven 180c. Place the patties on a lined baking tray. Cook for 15 miutes until brown and firm
  • Once cooked, remove out of the oven and sprinkle with parmesean, generously!
  • To Serve: Large Green Salad and Sweet Potato Wedges, Or GF Burger Buns with sliced tomato, cucumber, beetroot and lettuce.
