Sexy Mexy Pulled Chicken

A gluten free easy option to feed a crowd or your family mid week.

Serves 6

Ingredients
 

  • 1 Whole Chicken, Free Range
  • 1 750ml Passata
  • 1 onion, Sliced
  • 2 cloves garlic, Diced
  • 1/2 cup GF Mexican Seasoning, or make your own with Cumin and Smoked Paprika
  • 2 Capsicums, Sliced
  • 1 250ml Salsa

Instructions
 

  • Plug in your slow cooker and set to either HIGH (approx 4 hours cooking) or LOW (approx 6 hours cooking) depending on your day
  • Place the whole chicken in the pot. Cover with the passata, onion, garlic, the Mexican seasoning and 1 cup of water. Season with salt and Pepper
  • Place the lid on. Cook. Done!
  • Remove the chicken from the beautiful sauce and pull the meat from the bones. Place the pulled chicken back into the sauce to stir through. You can add some spice if you like or a handful of diced tomato and fresh herbs, or just leave it as it.
  • Serve in the middle of the table with your condiments and heated gluten free wraps. Sit back and relax
