Simple Pea and Ham Soup

Cooking this soup with the leftover Christmas Ham Bone is the best part of easing into Winter

Serves 6

Ingredients
 

  • 3 cups DRIED SPLIT PEAS: , You can choose fresh as an option however, the dried split peas create a beautiful thickness to this soup
  • 1 HAM BONE:, Including the ham skin
  • 5 cloves GARLIC: , Whole
  • 2 ONION: , Diced
  • 5 CARROTS:, Chop in chunks
  • 2 heads BROCOLLI: , Along with any other greens you have in your fridge
  • 5 cubes CHICKEN STOCK:

Instructions
 

  • Bring a large pot of water to boil. Ensure the ham bone is covered by the water
  • In the pot, add the garlic, onion, carrot, brocolli, ham bone, split peas, stock and pinch of salt. Bring to boil. Then simmer.
  • Leave the soup to cook for an hour
  • Once cooked, remove the ham bone and pull the meat away, chop into smaller pieces and add back to the pot. Season with salt and pepper
  • Told you it is easy!
