Simple Pea and Ham Soup
Cooking this soup with the leftover Christmas Ham Bone is the best part of easing into Winter

Serves 6
- 3 cups DRIED SPLIT PEAS: , You can choose fresh as an option however, the dried split peas create a beautiful thickness to this soup
- 1 HAM BONE:, Including the ham skin
- 5 cloves GARLIC: , Whole
- 2 ONION: , Diced
- 5 CARROTS:, Chop in chunks
- 2 heads BROCOLLI: , Along with any other greens you have in your fridge
- 5 cubes CHICKEN STOCK:
Bring a large pot of water to boil. Ensure the ham bone is covered by the water
In the pot, add the garlic, onion, carrot, brocolli, ham bone, split peas, stock and pinch of salt. Bring to boil. Then simmer.
Leave the soup to cook for an hour
Once cooked, remove the ham bone and pull the meat away, chop into smaller pieces and add back to the pot. Season with salt and pepper
