So when the airfryer was invented, it changed our life. I love making these burger patties for the family as a vego option. You can hide more veggies if you are keen!

Gluten Free Zucchini Fetta Parmeasen Burger Patties are is about building this recipe into something delicious! Lets create the patties then the burger!

Ingredients

  • ZUCCHINI: The most delicious understated vegetable
  • FETTA: Helps to bind the ingredients and brings in a beautifl flavour
  • RED ONION: For a sweet taste
  • PARMESEAN: The star!
  • FREE RANGE EGG: Always free range!
  • SWEET POTATO: For a touch of colur and of course, goodness!
  • GLUTEN FREE SELF RAISING FLOUR: Any brand is great!
  • TO SERVE: Gluten Free Buns, Sliced Beetroot, Sliced Tomatoes, Caramelised Onions, Baby Spinach, Chilli Sauce

Instructions

  1. Let’s get cooking! In bowl, add the eggs, the grated zucchini. sweet potato, the onion, fetta, flour and parmesean. Mix this together.
  2. Create patties about the size of your hand and push together to ensure its all nice and tight. See photo. PLace in the airfryer with lined with baking paper.
  3. Cook 180c for 10 mins. Then gently flip them over to the other side an cook for another 10mins. Season with salt and pepper
  4. Then build your burger. Lots of colour and delicious flavours or whatever you have in the fridge. Choose good quality gluten free buns, its worth it! Toast them for the crunch on the outside and softness inside

Can I make this in advance

Yes, you can! Make its the night before and place in the fridge ready to reheat for serving

Can I add other vegetables?

Do it! Carrots, Beetroot, Spinach, Kale…. the choice is yours!

Can I freeze the patties?

Yes, you can! This sort of dish is great for batch cooking, so go for it!
