I love this recipe because the flavours are insane! The combination of chicken, bacon, white wine, garlic, onion – do I need to say more!!
Ingredients
CHICKEN THIGH AND DRUMSTICKS: My favourite cuts of a chicken as they offer the best flavour
WHITE ONION: Sliced and great colour!
GARLIC: Always!!
BACON: Make sure you don’t cut off the fat, its the best part!
MUSHROOMS: Choose your favourites or whatever is available
RED WINE: Shiraz or Cab Sav
TOMATO PASTE: Just a touch to bring the flavours together
GLUTEN FREE FLOUR: For a light dusting of the chicken
FRESH ROSEMARY: Just a hint!
To Serve: White mash and lots of greens!
Instructions
Let’s get cooking! In a snap lock bag or plastic bag, place the chicken and gluten free flour. Shake it and ensure all of the chicken is coated with the flour
Heat a large frypan with 2 tbsp olive oil. Start the panfry the chicken pieces until brown all over. No need to cooked through. Approx 5 minutes per side. Then set aside.
In the same frypan, add all your other ingredients and start the smell the delicious sauce come together. Bring to boil, then simmer for 10 minutes.
Then add the chicken back into the frypan and evenly coat. Place a lid on the frypan for 15 minutes to ensure the chicken is cooked through. At the end, add fresh parsley and season with salt/pepper.
To serve – Creamy mash potato and lots of greens
