Creamy Butter Chicken GF DF does not have to be lathered in cream and butter. I have created a healthy version that will actually give you nutritional benefits!

This dish, of course as always, is easy with minimal ingredients. I love to cook with chicken drumsticks as they offer maximum flavour to this dish without adding stock. The spices blend beautifully with the coconut cream and the touch of passata to create a beautiful colour of goodness.

Always serve with condiments such as fried shallots, fresh chilli, lemon wedges and Greek yoghurt. You could also add gluten free naan bread or pappadums to dip into the creamy sauce. I love to serve with Basmati Rice as its light and the perfect grain to compliment the chicken.

Ingredients

  • CHICKEN DRUMSTICKS: I love drumsticks as they offer maximum flavour
  • GARLIC : Diced
  • ONIONS: Diced
  • COCONUT CREAM: A delicious texture
  • PASSATA: Just a dash
  • CURRY POWDER: Mild or Hot, totally up to you
  • SMOKED PAPRIKA: I LOVE this spice
  • TO SERVE: Basmati Rice – lemon wedges – fried shallots – greek yoghurt (optional) or coconut yoghurt for dairy free option

Instructions

Let’s get cooking!

  1. Place a large frypan on your stove top. I love to use my Paella Pan. Drizzle olive oil and panfry the garlic and onion for 1 minute. Add your spices and combine for 1 min
  2. Add the drumsticks to brown the skin. Add a dash of olive oil to loosen the spice mix. Once both sides are brown, reduce the heat and add coconut cream along with the passata. Stir to combine.
  3. Cover with a lid and allow to simmer gently, season with salt and pepper
  4. After 20 minutes, the drumsticks will be cooked beautifully. Just piece the meat closest to the bone to ensure the chicken is completely cooked through
  5. Serve with basmati rice and condimetnts.

Tips And Tricks

Can I choose thigh or breast?

I would recommend thigh. Lots of flavour.

Do I need to add any sugar?

No need!

Can I freeze any leftovers?

Absolutely! Prepack containers with rice and chicken ready to go for a busy week
