Satay Sunday Beef Mince as it ends the week and starts the week with a delicious meal in the fridge. I add whatever is leftover from the veggie draw in the fridge to mix through the peanut satay sauce. This saves on waste and adds to the flavour. The kids love to take this to work for lunch or devour when arriving home starving!

Satay Sunday Beef Mince as it ends the week and starts the week with a delicious meal in the fridge. I add whatever is leftover from the veggie draw in the fridge such as carrots, beans, zucchini, bok choy, half a capsicum, the odd celery stick to mix through the peanut satay sauce. This saves on waste and adds to the flavour. The kids (they are actually three grown young adults all working but always will be kids to be me) love to take this to work for lunch or devour when arriving home starving! Its also a great meal to make ahead and freeze. Its economical to make and very tasty! You could always add more peanut butter, however, you want to keep the balance of the flavours. I sometime add Asian Fried Shallots, which you can find in the Asian area of the Supermarket. Fresh coriander is also a lovely authentic touch for the fans who love this herb!

Satay Sunday Beef Mince is what we love as a family, however, you are welcome to swap the beef for pork or chicken or whatever is available. It will literally will take you 15 minutes to cook. Once cooled, I place the white rice on the bottom, then top with the nutty mixture. I leave a serving spoon in the middle and its all gone by day 1! Yes, the leave the tray EMPTY in the fridge, an ongoing pet hate of mine! 🙂

Satay Sunday Beef Mince offer the enjoyment of gluten and dairy free! You can cook with crunchy or smooth peanut butter. I prefer crunchy for texture and also add a hint of chili for spice. Adding the peanuts at the end adds a lovely crunch. The squeeze of lemon adds the tang that balances the whole dish and tastes incredible in every mouthful! You can also serve this with rice noodles or enjoy on its own!

You will end up cooking this every week! I promise!

Ingredients

  • PEANUT BUTTER: I prefer crunchy! You can choose sugar-free as an option
  • COCONUT CREAM: Buy from your supermarket in the Asian section or from your local Asian Grocer. Important to choose cream, not coconut milk
  • GARLIC: Always!
  • BEEF MINCE: Or you can opt for pork or chicken
  • TAMARI: Gluten Free Soy Sauce available in supermarkets and health stores
  • VEGGIES: Whatever you have leftover in your fridge, carrots, zucchini, capsicum, peas, beans
  • FRESH LEMON: Just a squeeze for a little tang
  • TO SERVE: White fluffy rice

Instructions

  1. Let’s get cooking! Place a large frypan on the stove over medium heat. Add garlic, and peanut butter. Stir as the peanut butter starts to melt.
  2. Slowly add coconut cream and tamari. Turn down the heat to avoid burning the sauce. Move to the side and off the heat once smooth.
  3. iIn a large frypan, add the beef mince and cook until brown. Add your chopped veggies to soften. Then stir through the peanut sauce to combine together.
  4. Place in a large dish with white fluffy rice on the bottom. Sprinkle with peanuts and a squeeze of lemon

No, its best fresh and will last in your fridge up to 5 days

Can I add change this recipe to chicken or pork mince?

Great idea! Delicious with either protein.

  • 600 grams BEEF MINCE:
  • 2 tbsp TAMARI:, Gluten Free Soy Sauce available in supermarkets and health stores
  • 2 cups VEGGIES: , carrots, zucchini, capsicum, peas, beans
