Gluten-Free Italian Mussels

Gluten Free Italian Mussels are easy to cook and prepare, you will be serving them every night! Serve with a crusty loaf of GF bread to dip into the delicious sauce.

Serves 4

Ingredients
 

  • 1kg Mussells
  • 2 cloves garlic, diced
  • 1 white onion, diced
  • 2 carrots, diced
  • 1 glass white or red wine
  • 1 500g Tin tomatoes, chopped

To serve - Fresh Chilli and Mint

Instructions
 

  • Let's get cooking! Drizzle olive oil in a large saucepan and add the garlic, onion, carrot, and celery. Season with salt and pepper.
  • Add the can of tomato and wine. Bring to a boil. Then simmer for 5 minutes to combine the flavours.
  • Add the drained mussels (sometimes they are in water) into the saucepan and toss through the sauce. Place a lid on top and allow to cook on medium heat for around 10 - 15 minutes.
  • You will know when they are cooked when all the shells open up! The smell is incredible! Taste your sauce and add a little more salt/pepper if needed.
  • Serve in bowls with fresh mint and chilli.
