Gluten Free Roasted Gnoochi Tray Bake
A delicious combination of zesty lemon, creamy fetta and peppery rocket!

Serves 4
- 1 500g GF Gnocchi, Premade
- 4 tbsp Pesto
- 1 Lemon
- 2 cups Veggies:, I love to add capsicum zucchini and brocolli
- 1 cup Rocket
- 4 tbsp Feta
- 4 tbsp Parmesan
Preheat oven 180c and prepare baking trays with baking paper
Literally, throw all of the ingredients on the tray except for rocket, feta and parmesean. Squeeze with fresh lemon and olive oil.
Bake for 15 minutes.
Remove from the oven and toss through rocket, fetta, parmsesan and a sprinkle of olive oil. I also like to add an extra dallop of pesto. Serve and enjoy!
