Gluten Free Roasted Gnoochi Tray Bake

A delicious combination of zesty lemon, creamy fetta and peppery rocket!

Cook Time 15 minutes
Serves 4

Ingredients
 

  • 1 500g GF Gnocchi, Premade
  • 4 tbsp Pesto
  • 1 Lemon
  • 2 cups Veggies:, I love to add capsicum zucchini and brocolli
  • 1 cup Rocket
  • 4 tbsp Feta
  • 4 tbsp Parmesan

Instructions
 

  • Preheat oven 180c and prepare baking trays with baking paper
  • Literally, throw all of the ingredients on the tray except for rocket, feta and parmesean. Squeeze with fresh lemon and olive oil.
  • Bake for 15 minutes.
  • Remove from the oven and toss through rocket, fetta, parmsesan and a sprinkle of olive oil. I also like to add an extra dallop of pesto. Serve and enjoy!
