Healthy Plum Coconut Cake
A gluten free cake that easy to create and even easier to eat!

Serves 8
- 2 cup GLUTEN FREE SELF RAISING FLOUR: , Any brand you can find in the store
- 1 cup GREEK YOGHURT: , I love the creaminess of this yoghurt
- 2 FREE RANGE EGGS: , Always
- 1 cup DESSICATED COCONUT: , Delicious flavour through the cake
- 6 FRESH PLUMS: , Juicy and ripe
- 1 cup RAW SUGAR: , Always
- 1 cup OLIVE OIL: , Instead of butter!
Preheat oven 180c. Spray a cake tin with olive oil and get ready to create.
In a large bowl, add all the ingredients except the plums
Beat the mixture for approx. 10 minutes to combine and create a smooth texture. Pour into the cake tin.
Enjoy the moment of decorating the mixture with a display of the sliced plums. Then place in the oven for approx 30 mins
To check if you cake is cooked, place a knife in the middle and if it comes out clean, its cooked. If not, leave the cake for another 5 minutes and check again
Once cooked, remove from the oven, transfer to a platter and sprinkle with coconut. Delish with cream or ice cream
