Healthy Plum Coconut Cake was created in my kitchen this week after watching Prue Leith whip this up so effortlessly. I was inspired to bake, even though I hate to measure! If you have been following my instagram, you would know that I inherited a Mix Master and its changed my life, literally! Yes, I think I am the best baker ever….and becoming a little too confident in not being accurate with my measurements!
Back to the recipe….of course, this is my gluten free version its smells divine in the oven whilst cooking! You can swap the plums for any fruit in season such as apple, pear, banana or berries. Just keep the basic ingredients the same. I have created this recipe as simple as possible to encourage you to to bake!

Ingredients
Fresh! Fresh! Fresh!
- GLUTEN FREE SELF RAISING FLOUR: Any brand you can find in the store
- GREEK YOGHURT: I love the creaminess of this yoghurt
- FREE RANGE EGGS: Always
- DESSICATED COCONUT: Delicious flavour through the cake
- FRESH PLUMS: Juicy and ripe
- RAW SUGAR: Always
- OLIVE OIL: Instead of butter!

Instructions
Let’s get cooking!
- Preheat oven 180c. Spray a cake tin with olive oil and get ready to create.
- In a large bowl, add all the ingredients except the plums
- Beat the mixture for approx. 10 minutes to combine and create a smooth texture. Pour into the cake tin.
- Enjoy the moment of decorating the mixture with a display of the sliced plums. Then place in the oven for approx 30 mins
- To check if you cake is cooked, place a knife in the middle and if it comes out clean, its cooked. If not, leave the cake for another 5 minutes and check again
- Once cooked, remove from the oven, transfer to a platter and sprinkle with coconut. Delish with cream or ice cream
Can I add other fruits?
Of course! Choose whatever in season. The base of this recipe will create a delicious cake.
Why do you use olive oil instead of butter?
I love both, however, for cakes, I love adding olive oil as it creates a softness to the cake like no other
Why do you prefer Raw Sugar ?
Its unrefined and better for you!
