Herb Baked Fish with Rustic Italian Salsa is a tender, flaky white fish baked in the oven to perfection, then topped with a vibrant, rustic salsa made with fresh tomatoes , garlic, herbs, and a splash of olive oil,oil. The kind of simple Italian magic that transforms everyday ingredients into something special.

I love to cook this through the week for a quick meal and I have also brought this to the table when hosting a casual dinner. This dish comes together in under 30 minutes and pairs beautifully with rice, roasted veggies, or a crisp green salad. It’s light, bright, and bursting with Mediterranean flavour. No frying, no heavy sauces, just clean ingredients and bold taste.

I have chosen Barramundi Fish for this recipe as it bakes beautifully. However, any firm fish will be just as delicious!

  • White Firm Fish: I loved Barramundi, however, any firm white fish will be delicious
  • Dried Oregano: These little sprinkles add so much flavour
  • Fresh Tomatoes: The basis of the rustic salsa
  • Fresh Basil: The smell of this herb transports me to italy!
  • Olives: Optional but definitely worth adding
  • Lemon: The fresh touch

Instructions

  1. Preheat oven 180c.
  2. Place the fish in a single layer on an oven tray or dish. Drizzle with olive oil, season with salt and pepper, sprinkle with oregano. Squeeze half a lemon and bake for 25 minutes or until completely cooked through
  3. Dice the tomato and olives. Place in a bowl. Add chopped basil and season well with salt and pepper. Add a dash of olive oil and white vinegar.
  4. Place the cooked fish on a large white platter. Arrange the salsa on top of the fish. Drizzle a little more olive oil and serve with lemon wedges.
