Herb Baked Fish with Rustic Italian Salsa is a tender, flaky white fish baked in the oven to perfection, then topped with a vibrant, rustic salsa made with fresh tomatoes , garlic, herbs, and a splash of olive oil, oil. The kind of simple Italian magic that transforms everyday ingredients into something special.
I love to cook this through the week for a quick meal and I have also brought this to the table when hosting a casual dinner. This dish comes together in under 30 minutes and pairs beautifully with rice, roasted veggies, or a crisp green salad. It’s light, bright, and bursting with Mediterranean flavour. No frying, no heavy sauces, just clean ingredients and bold taste.
I have chosen Barramundi Fish for this recipe as it bakes beautifully. However, any firm fish will be just as delicious!
