Ingredients

Here’s what you’ll need to make this easy dinner. No stress required!

  • GF Gnocchi: Store bought from your local supermarket or health food store
  • Pesto: Homemade or bought, no guilt!
  • Lemon: Don’t hold back, this delicious citrus flavour makes this dish zing
  • Veggies: Whatever you have in the fridge, I love to add capsicum zucchini and brocolli
  • Rocket: A peppery balance to the citrus flaours
  • Feta: The crumbling type of feta
  • Parmesan: Always!

Instructions

It is our secret of the simplicity!

  1. Preheat oven 180c and prepare baking trays with baking paper
  2. Literally, throw all of the ingredients on the tray except for rocket, feta and parmesean. Squeeze with fresh lemon and olive oil.
  3. Bake for 15 minutes.
  4. Remove from the oven and toss through rocket, fetta, parmsesan and a sprinkle of olive oil. I also like to add an extra dallop of pesto. Serve and enjoy!

  • 4 tbsp Pesto
  • 1 Lemon
