Meatfree Monday – Gluten Free Lentil Parmesan Patties

Remember the days when Vegetarian use to boring! Soggy carrots and brussell sprouts with no taste. Cooking has come along way with adventure of flavours especially when creating vegetarian options for your family. The Gluten Free Lentil Parmesean Patties take only a few minutes to make and then cooked in the oven. I love to serve these with a big salad and sweet potato wedges. The are even better the next day cold straight from the fridge!

Gluten Free Lentil Parmesean Patties could quite possibly be your new dish to cook on Meatless Mondays! Remember, the parmesean is the shining ingredient making this dish even more delicious!

Ingredients

  • LENTILS : You can soak your own, but who has time!
  • SWEET POTATO : Grated and hidden
  • BROCCOLI: Love the texture brocolli gives to the patties
  • BROWN OR WHITE RICE : Precooked. You can buy the packets from the supermarket
  • GLUTEN FREE FLOUR: A staple in your pantry
  • PARMESEAN: Fresh and grated. You can never have enough!

Instructions

  1. Let’s get cooking! Literally throw all ingredients except the parmesean into a bowl. Mix and make the patties. Approx 6.
  2. Preheat oven 180c. Place the patties on a lined baking tray. Cook for 15 miutes until brown and firm
  3. Once cooked, remove out of the oven and sprinkle with parmesean, generously!
  4. To Serve: Large Green Salad and Sweet Potato Wedges, Or GF Burger Buns with sliced tomato, cucumber, beetroot and lettuce.

Tips And Tricks

Can I make Lentil Parmesean Patties in advance?

Yes. Place in the fridge ready to go!

Do I need to cook the grated sweet potato before adding the to mixture?

No! How good! Easy! Just throw it all into the bowl

Can I freeze the Lentil Parmesean Patties?

Yes! That’s if you have leftovers, which is rare!

Ingredients
 

  • 1 400g LENTILS
  • 1 cup SWEET POTATO , Grated
  • 1 cup BROCCOLI, Cut finely
  • 1 cup BROWN OR WHITE RICE, Precooked

  • 1/2 cup PARMESEAN, Freshly grated
