Sexy Mexy Pulled Chicken is a crowd pleaser! All cooked in a slow cooker for ease. A friend of mine cooked this for a large crowd years ago and I had forgotten all about it. Then this week, I was as the supermarket and I was keen to cook a roast chicken. Well, the memory of the Mexican Chicken came back to me and I was ready to re-create the recipe!
You can serve Sexy Mexy Pulled Chicken for just for your family or for a crowd. I promise you the whole dish will be gone within minutes and someone will be licking the bowl! I love all the condiments you can serve along side with the Sexy Mexy Pulled Chicken such as sour cream, salsa, mexican beans, fresh chilli, grated cheese and fresh tomato. Serve with wraps and nothing else is required

Let’s get cooking!
Plug in your slow cooker and set to either HIGH (approx 4 hours cooking) or LOW (approx 6 hours cooking) depending on your day
Place the whole chicken in the pot. Cover with the passata, onion, garlic, the Mexican seasoning and 1 cup of water. Season with salt and Pepper
Place the lid on. Cook. Done!
Remove the chicken from the beautiful sauce and pull the meat from the bones. Place the pulled chicken back into the sauce to stir through. You can add some spice if you like or a handful of diced tomato and fresh herbs, or just leave it as it.
Serve in the middle of the table with your condiments and heated gluten free wraps. Sit back and relax
Can I add veggies to the Slow Cooker with the chicken?
Of course! Throw whatever you have in for extra fibre and flavour.
Do I need to check the chicken whilst cooking ?
No, that is the beauty of the Slow Cooker! It will be cooked beautifully by the time its done.
Can I serve the chicken Whole ?
Now that is a nice idea and your people can pull their own chicken, then add the sauce. Although, I do love the pulled chicken in the sauce ready to serve and less mess
