White Fish: I chose Barramundi this time, however, you are can choose Snapper, Ling or Brim. Any white fish that is boneless and meaty
Smoked Paprika: I love this spice that elevates any dish any time!
Onion: Sliced
Garlic: Crushed
White Wine: A glass for you and a glass for the dish
Veggies: Whatever you have in the fridge!
Chicken Stock: Homemade or powdered, as along as its Gluten Free
Fresh Herbs: I love parsley for this recipe
Fresh Tomato: For the sweetness
Lemons: Sliced
Serve with steamed potatoes, green salad and crusty gluten free bread

Preheat oven 180c. Then a large baking dish that you can place on the stovetop, add a dash of olive oil. On a medium heat, add the all the veggies along with the garlic and onion. Gently stir to brown and great a delicious aroma of flavour. Add the white wine, smoked paprika and stock, Stir to combine and take off the heat.
Place your fish on top of the stew, along with lemon slices, salt and pepper. Cook uncovered for 30 minutes. Half way through, baste the fish with the delicious sauce simmering underneath
When ready, remove from the oven and serve in bowls. If you need more liquid, add more broth to the pan before serving to stir through the juices.

I am sure you can. I would suggest thinly sliced breast marinated with the smoked paprika to carry the flavour through the dish

Great idea! Some people love it, others hate it! I love it!
What other options would you suggest for serving?
I have a made a simple potato bake to serve along side or steam potatoes. Definitely do not serve with mash as the liquid will make it all gooey
