We all love a Gorgeous Greek Salad. It can be served with any dish and buffet of goodness. I love the combination of flavours with the fresh lemon.
Although this salad has been reinvented 10000 times, I love my creative flair of the presentation. Platters change everything! I round platter is gorgeous to display a beautiful salad.
The crisp, whole, cos lettuce leaves as a base with the oregano fetta in the middle is the foundation, then we build and colour in with fresh ingredients.
A dressing is always simple as its not the hero of the salad! I love a combination of olive oil, apple cider vinegar and lemon.

Ingredients
Fresh! Fresh! Fresh!
OREGANO : Diced
COS LETTUCE: Crisp and Fresh
KALAMATA OLIVES: Pitted
CHERRY TOMATO: Red is traditional, although, you could add orange and green tomatoes for a little bit of fancy
ONION: Finely sliced – red
FETTA: Firm
FRESH LEMON:
LEBANESE CUCUMBERS: I love the baby cucumbers
FRESH MINT: Chopped finely

Instructions
Let’s get cooking! Guess what! There is no cooking!
Lets create magic! Find a gorgeous round platter. Place the Fetta in the middle and sprinkle with oregano
Then place whole cos lettuce leaves in a circular pattern to cover the base. Chop the remaining cos and sprinkle over the whole leaves.
Dice the cherry tomatoes and sprinkle evenly around the leaves. Slice the cucumber to do the same.
Add the olives, sliced onion and fresh mint. Season with salt and pepper
In a jar, add the olive oil, apple cider vinegar and fresh lemon juice. Shake. Pour evenly over the salad to serve
Can I make this salad ahead of time?
Yes you can. Just place in the fridge and add the dressing just before serving
Can I add any other vegetables?
I like to create with the traditional ingredients, however, roasted capsicum would be divine in this salad
Could I serve protein on the side?
Yes! Oregano Lemon Chicken Breasts, Garlic Mint Lamb Skewers or a Pulled Pork would be delicious
