Throw a Shrimp on the Barbie. Love this Australian saying! Suitable for this recipe, as this literally what you need to do in the Summer time with a nice glass of cold Pino Grigio.
Perfect for any night of the week! Prepare your prawns and let them marinate in the summer flavours with a little hint of chilli. I simply serve these delicious crustaceans with a fresh salad and roasted herb potatoes.
If you don’t have a BBQ, a grill plates works just well. Make sure its hot for the sound of the sizzlle!


Why I Love This Recipe
I love this recipe because with just a few stunning ingredients you can create a mouthful of happiness!
Ingredients
- FRESH RAW PRAWNS: Deveined. I like to leave the heads and tails on.
- FRESH MINT: Finely chopped
- GARLIC: Always!
- CHILLI : To your liking!
- CAPSICUM: Finely sliced
- OLIVE OIL: A beautiful way to cook the prawns
- RED ONION: Finely sliced

Instructions
- Let’s get cooking!
- Finely chop the garlic, mint and chilli – leave to the side
- Finely slice the onion and capsicum – leave to the side
- Devein the prawns by running a sharp knife across the back and the insides will come out. Keep the head and tails on. Give the prawns a rinse.
- In a large dish, place the onion and capsicum on the base, then the prawns. Sprinkle over the garlic, mint and chilli, Drizzle with olive oil and squeeze fresh lemon. Leave in the fridge for an hour or so.
- Heat up the BBQ or Grill Plate – make sure its HOT! You want to hear the sizzle. Drizzle a little olive oil and place the mixture on the hot plate. Cook by turning the prawns until they change to a beautiful orange colour and the veggies are still crisp.
- Serve with a vibrant green salad or roasted veggies!
