Gluten-Free – My Nonna’s Italian Mussels

Gluten Free Italian Mussells are an easy mid-week dinner! Yes! To feed the family, cook a pot of GF pasta and serve the delicious mussels on top with the Italian sauce. Sprinkle with parmesan and serve with a glass of red wine!

Ingredients

  • MUSSELS: In Australia, I prefer mussels from our local suppliers. Make sure they are super fresh, and be sure to discard any that don’t open after cooking.
  • GARLIC: A must! Load this dish up with as much as you like!
  • WHITE ONION: Perfect combo with the garlic to kick off the cooking aromas
  • CARROT & CELERY: The base of any great Italian recipe!
  • WINE: A glass for the dish and a glass for the cook, am I right??
  • CANNED TOMATO: Gives these mussels a glorious tomatoey body and fab Mediterranean flavours, which bring this dish together!
  • TO SERVE: Fresh mint, chilli.

Instructions

  1. Let’s get cooking! Drizzle olive oil in a large saucepan and add the garlic, onion, carrot, and celery. Season with salt and pepper.
  2. Add the can of tomato and wine. Bring to a boil. Then simmer for 5 minutes to combine the flavours.
  3. Add the drained mussels (sometimes they are in water) into the saucepan and toss through the sauce. Place a lid on top and allow to cook on medium heat for around 10 – 15 minutes.
  4. You will know when they are cooked when all the shells open up! The smell is incredible! Taste your sauce and add a little more salt/pepper if needed.
  5. Serve in bowls with fresh mint and chilli.

Can I make this ahead?

Not really… Although you could make this dish an hour before your serving time and leave on a low heat

Can I use basil instead of mint?

Absolutely!

Can I freeze this dish?

No. This dish is not suitable for freezing.

  • 1 white onion, diced
  • 2 carrots, diced
  • 1 glass white or red wine
  • 1 500g Tin tomatoes, chopped

To serve – Fresh Chilli and Mint
